![]() ![]() Heat for 1. It really does make a significant difference in the flavor of the ham. Pour half of the glaze (see recipe below) over ham and in between the spiral slices. ![]() Mine took about 2.5 hours, smoking at 225-250. We do recommend using a spiral sliced ham as that will allow more of the flavor from the smoke and the glaze to get to the inside. A bone-in ham usually has more flavor, stays juicier, and offers the cook a prized possession: the ham bone. Place a rack in a large roasting pan and cover the rack with foil. Cover the ham and the top of the pan tightly with aluminum foil. Mix the chicken stock, bourbon, and maple syrup and pour it over the ham. Remove the ham from the smoker and place it in a large 12-inch cast iron skillet. I used my Traeger Timberline 1300 for this cook and used Bear Mountain cherry pellets. Close the lid and smoke the ham for 1.5 hours. Get the internal temp to around 140 and you’re done. This includes spiral hams, which, being pre-sliced, are even more convenient than regular boneless hams but more prone to drying out during cooking. Step 1 Remove ham from refrigerator and let sit at room temperature for 1 hour. You can certainly use the packet it comes with, but I tend to find homemade is always best, and I have a simple recipe that makes the perfect sweet ham glaze. The ham will naturally start spreading apart, allowing the sugar to seep into the slices, creating an even more delicious experience. All that does is layer on the caramelized goodness you crave. And baste it a few times as I did here – with more sugary happiness. The first step, reflected in the above picture, is to baste it with sugary happiness, then sprinkle it with sugary goodness. You’d probably take all these steps regardless if you cooked it in the oven or smoker, so just smoke it, for heaven’s sake.
